Finding the right culinary art institute can be a daunting task.  A rewarding career as a chef, caterer, baker, or pastry chef can be accomplished in as little as 15 months.    

The following  is a basic outline of the curriculum taught in most reputable culinary arts schools:

bulletCulinary terms.
bulletUtensils, modern kitchen equipment, knives, and techniques of their usage.
bulletBasic cooking principles (dry and moist cooking and alternative methods).
bulletFive basic (“leading”) sauces, secondary sauces (“small”), manufacture of stocks, soups.
bulletSeasoning and chef’s flavoring.
bulletClasses in meat, poultry and seafood butchering and preparation.
bulletEthnic cuisine, essential baking, starch and potato cookery, and vegetable cooking.
bulletSalads and “garde manger,” breakfast service, sandwich making.
bulletRecipes and menu design.
